Grilled Pineapple + Mango Salad.
1 pineapple, peeled, trimmed, cored, and sliced into 2cm slices.
2 to 3 ripe good sized mangoes, skinned, pitted and cut into cubes.
1 tablespoon chopped fresh coriander.
1 tablespoon sliced fresh garden mint.
1/4 teaspoon dry cayenne pepper.
Preheat your bbq and spray oil on the hotplates. Cook the pineapple rings for 3 to 4 minutes on each side, until the pineapple is cooked through, the sugars start to blister up to the surface, and you can view the caramelisation get under way. Remove from grill and let cool down for a minute.
